Who knew a cabbage could be such a yummy steak? In looking for ways to get creative with plant-based foods I stumbled upon cabbage steaks! I have tried cauliflower steaks before and those are delish so I thought why not cabbage too? Grab yourself a large head of cabbage (super economical too!) slice it into 1″ thick slices, drizzle with EVOO, salt & pepper, and roast – that’s it.
To make these more family-friendly I spread marinara sauce on top and sprinkled them with fresh basil (you could add shredded cheese if you wanted) This gave it a pizza vibe in my opinion. Once the cabbage is roasted it truly transforms into an addictive veggie to eat. Like brussel sprouts – once roasted they are delish. And these are from the same cruciferous family too!
Crispy Roasted Cabbage Steaks
Ingredients
- 1 Head Cabbage
- 1/4 cup Olive Oil
- 1 cup Marinara Sauce
- 1/2 cup shredded parm cheese (divided)
- Salt & Pepper to taste
- Fresh herbs such as basil & parsley (optional)
Instructions
- Preheat oven to 400f. Spray a large lined baking sheet.
- Cut off the bottom (root) end of the cabbage and place it on a cutting board sitting up so that the flat end is on the cutting board. Slice from top to bottom into 1-inch thick slices. Place on the baking sheet. If you have more slices than fit on your baking sheet without touching, divide them between two baking sheets.
- Brush olive oil evenly on both sides of cabbage slices. Sprinkle with salt & pepper then top with marinara sauce evenly onto each slice.
- Roast cabbage for about 25-28 minutes until crispy brown edges form and the middle is tender.
- Remove from oven, sprinkle with parm cheese and fresh herbs. Enjoy hot!
