Key Lime Pie Energy Bites

This recipe was inspired by my daughter who loves Key Lime anything and recently got me hooked too! Energy bites are easy and much healthier options for a quick snack. You just need a few ingredients and if you can find actual ‘Key Limes’ that’s a bonus! But regular limes will work too.

All you will need are cashews, softened dates (to do this, just soak in hot water for a few minutes), shredded coconut, and limes! That’s it! I told you that these were easy! I like to double the batch and freeze them so I have them on hand.

No added sugars – only sweetened with dates. Way better than store-bought energy bars in my opinion!

Key Lime Pie Energy Bites

Simple and healthy energy bites that taste like a Key Lime Pie!

Ingredients
  

  • 1 cup raw cashews
  • 1 cup soft, pitted dates
  • 2 tbs fresh lime juice
  • zest from 1 lime
  • 1/2 cup unsweetened shredded coconut (optional for more to roll in)

Instructions
 

  • Add all of the ingredients to a food processor and pulse until everything is combined well. Roll into mini balls and then roll into extra shredded coconut if desired. Store in an airtight container in the fridge for a week or freeze for up to 3 months.
