On my journey to try to eat more paleo I stumbled across this delicious recipe from one of the many paleo blogs that I follow, http://paleogrubs.com. While I try to keep my sweet tooth in check I am always happy to find recipes like these to satisfy it while keeping it healthy. I am not a great baker (and my kids will be quick to agree, lol) but these were super simple and oh boy did they come out moist and delicious! Especially warm! I froze half of the batch for later indulgences and wrapped the rest and put them in the fridge for a quick portable snack. Give them a try and let me know what you think! Kids will love them too!
First I fork mashed the bananas in a large bowl to get them nice and blended. Doesn’t look like much but you get the idea!
Banana Nut Muffins (paleo style)
Ingredients
- -4 riped bananas the riper the better for mashing
- -1/2 Cup almond butter can use peanut butter but will no longer be paleo
- -4 eggs
- -2 tbs coconut oil melted
- -1 tsp vanilla
- -1/2 Cup coconut flour
- -2 tsp cinnamon
- -1/2 tsp nutmeg
- -1 tsp baking powder
- -1 tsp baking soda
- -1/4 tsp salt
Instructions
- Preheat oven to 350 degrees Place cupcake liners in the muffin pan.
- In a large bowl mash the bananas then add eggs, almond butter, coconut oil, and vanilla. Use a blender to combine wet ingredients.
- Add in coconut flour, cinnamon, nutmeg, baking powder, baking soda and salt.
- Blend well to combine.
- Distribute the batter evenly in the lined muffin pan – just don’t fill all the way to the top as they will rise.
- Bake for 20-25 minutes. Check with a toothpick to see if cooked.
- Try one right away while they are still warm – trust me on this!
- Store in refrigerator in an resealable bag (I individually wrapped mine first for easy on the go snackinYou can also freeze some.
