Looking for an easy dish to bring to your next BBQ or even just a healthy weeknight dish? Check out my vegan antipasti recipe! While traditional antipasti dishes have meat and cheese, I have omitted those to keep this dish vegan and light. But feel free to add what you wish.
For the base, I started with romaine lettuce leaves. Then I added in a jar of the following;
Artichoke Hearts – chopped
Pitted Kalamata Olives
White Beans (drained & rinsed)
1/4 cup Chopped Red Onion (I like to soak them in water for a bit to take the sharp taste out)
Roasted Red Peppers
Cherry Tomatoes (about a handful)
Fresh Parsley to top
When you purchase these items in the jar or can form this creates a truly budget-friendly meal. (except the red onion and cherry tomatoes – those are fresh obviously but still budget-friendly!)
Next up, the dressing! This is where I always say simple and less is best! All you need is;
1/4 cup olive oil
1 tbs lemon juice
1 tbs dijon mustard
salt & pepper to taste
Shake it up and put it over!
That’s it! Yes, you can swap the veggies and even add in protein like chicken or fish. Even cheese if you wish – obviously that will no longer make it vegan but you knew that! LOL!
