Growing up I loved chocolate pudding cups! For a while, I would buy them for the kids and then eat them all lol! Like most of us once we grow up and learn what is really lurking in those pudding cups we know it’s time to make a switch. I have tried avocado pudding, which I enjoy, but this chocolate chia pudding really takes center stage. Plus, the added benefits of the chia seeds are a bonus!
Make yourself this batch and spoon out what you want throughout the week. Especially when you are craving something sweet – this hits the spot! Feel free to top with berries for a delicious and filling breakfast option too!

What you will need…
1 can of light coconut milk
1/3 cup chia seeds
2 tsp cacao
2 tbsp chocolate protein powder (optional but enhances the chocolate taste – I love Vital Proteins Collagen Powder)
1 tbs maple syrup (or honey)
splash of vanilla extract (1/4 tbs should work)
Mix it all together in a large bowl and set it in the fridge overnight. Then spoon out into a bowl & enjoy. Topping with chocolate chips and even whip cream is encouraged! You can also portion them into individual bowls for individual snacks before setting them in the fridge.
Fun Fact…..
Chia seeds expand when soaked so they make you feel fuller longer plus have protein and omega 3’s – maybe I should call this Superfood Chocolate Chia Pudding?!

Chocolate Chia Pudding
Ingredients
- 1 can ligh coconut milk
- 1/3 cup chia seeds
- 2 tsp cacao
- 2 tbsp. chocolate protein powder (optional)
- 1 tsp maple syrup
- 1/4 tsp vanilla extract
Instructions
- Pour all ingredients into a large bowl and mix together well
- Place in fridge overnight to set
- Scoop out and enjoy!
- Stays good for about 3-4 days in the fridge
