Chocolate Chia Pudding

Growing up I loved chocolate pudding cups! For a while, I would buy them for the kids and then eat them all lol! Like most of us once we grow up and learn what is really lurking in those pudding cups we know it’s time to make a switch. I have tried avocado pudding, which I enjoy, but this chocolate chia pudding really takes center stage. Plus, the added benefits of the chia seeds are a bonus!

What you will need…

1 can light coconut milk

1/3 cup chia seeds

2 tsp cacao

2 tbs chocolate protein powder (or any protein powder, the chocolate really enhances the taste!

1 tbs maple syrup

splash of vanilla extract (1/4 tbs should work)

Mix it all together in a large bowl and set in the fridge overnight. Then spoon out into a bowl to enjoy. Topping with chocolate chips and even whip cream is encouraged! You can also portion into individual bowls for individual snacks before setting in the fridge.

Fun Fact…..

Chia seeds expand when soaked so they make you feel fuller longer plus have protein and omega 3’s – maybe I should call this Superfood Chocolate Chia Pudding?!

Chocolate Chia Pudding

Quick health snack that doubles as dessert!


  • 1 can ligh coconut milk
  • 1/3 cup chia seeds
  • 2 tsp cacao
  • 2 tbsp. chocolate protein powder
  • 1 tsp maple syrup
  • 1/4 tsp vanilla extract


  • Pour all ingredients into a large bowl and mix together well
  • Place in fridge overnight to set
  • Scoop out and enjoy!
  • Stays good for about 3-4 days in the fridge
