Healthy Pumpkin Bars

Creamy pumpkin filling with a nutty crust.

Ingredients
  

  • 2 1/2 cups Pumpkin Spice Nutsola
  • 2 tbs water
  • 1 15 oz can pumpkin
  • 2 eggs
  • 1/4 cup maple syrup
  • 1/4 cup coconut milk (from the can)
  • 1 tsp vanilla
  • 1 tbs pumpkin pie spice
  • 1/8 tsp ground cloves
  • 1/8 tsp ground ginger
  • 1/8 tsp salt

Instructions
 

  • Preheat oven to 350F
  • Grease an 8x8 pan
  • In large bowl mix Nutsola with 2 tbs water. Press mixture evenly into pan.
  • Bake for 15 minutes. While baking mix pumpkin filling into a large bowl.
  • After the crust is baked and cooled for a few minutes, pour the pumpkin filling over the crust evenly.
  • Bake for 45 minutes. The top may brown a bit.
  • Let cool and cut into 9 bars. Feel free to top with whipped cream!
