Fruity Oatmeal Bars

During the week I prefer a fuss-free breakfast that I can grab and go. Mornings are busy right so let’s make them easy with these fruity oatmeal bake bars! 
 
 
What I love about this recipe is that it all goes in 1 bowl to 1 pan! We start with mashing an overripe banana (the riper it is the sweeter!) then add in the oats (I use GF from Trader Joe’s) eggs, oat milk, strawberries, and few chocolate chips because everything tastes better with chocolate, right? 
 
Growing up I was never a big oatmeal fan, but I have grown to love it so much now! I bake with it often in muffins, cookies and energy bites! Did you know that Oatmeal can help lower your blood pressure, is a great source of soluble fiber as well as protein and carbs!?  It is really a powerhouse of a nutrient! 
 
This recipe is so versatile so feel free to use any fruit you like, blueberries, raspberries, apples……the mashed banana should stay as it is part of the natural sweetness. No refined sugars here please! 
 
 
I topped mine with Siggi’s plain yogurt (it is one of my fav’s!), creamy natural peanut butter, jelly and a few more slices of banana. Other options are cinnamon, granola, other fruit, mixed nuts….I mean the possibilities are endless and yummy! 
 
You can portion them out and keep in the fridge or wrap some individually and freeze for another time to enjoy.  Best when heated up but really any way you eat them will be delish!

Fruity Oatmeal Bake Bars

Ingredients
  

  • 2 eggs
  • 1 cup milk of choice
  • 1 large ripe banana
  • 1 cup diced strawberries
  • 1/2 cup chocolate chips more if desired!
  • 2 cups rolled oats
  • 1 tsp baking soda
  • 1 tsp vanilla
  • 1 tsp cinnamon
  • pinch salt

Instructions
 

  • Preheat oven to 350f and grease a 9x9 baking pan.
  • Mash banana in a bowl then add in milk, vanilla, rolled oats, cinnamon, salt, and baking soda. Mix well.
  • Fold in strawberries and chocolate chips, mix together well.
  • Pour into greased pan and cook for about 30 minutes or until edges are browned a bit.
  • Let cool completely and cut into 9 squares. Keep covered in the fridge or wrap and freeze.
