Lately, my husband and I have been on a GREEK kick! This past week we made Greek salads to bring for lunch every day with olives, feta, cucumbers, onions, grilled chicken and this really tasty Greek salad dressing by Primal Kitchens! But I didn’t stop there! I had to make a big batch for dinner because I knew my son would like it too!
While our lunches were served over a bed of mixed greens, true Greek salad is not….well really an actual salad that we are used to per say. This recipe did not include any greens just straight mini cucumbers, kalamata olives, sliced tomatoes, red onions, chunks of fresh feta and lot’s of fresh dill.
The chicken was marinaded overnight and I made my own Tzatziki sauce with plain yogurt and let that sit overnight as well to let all the flavors marry nicely together. This was one of the most tastiest dishes! This will become a regular in our dinner rotation for sure! Great for the summer and easy to bring to a BBQ.

Greek Goddess Salad
Ingredients
- 1 pound boneless chicken breasts
- 2 Tbs Olive Oil
- ¼ cup lemon juice
- 2 cloves garlic
- 2 Tbs dried oregano
- 1 tsp S&P
- 5 baby cucumbers halved lengthways and sliced
- 8 oz cherry tomatoes halved
- ½ red onion sliced
- 4 oz Feta cheese cubed
- ½ cup pitted kalamata olives sliced
- small bunch fresh dill chopped (or dried)
- Tazatziki Sauce
- 1 cup plain greek yogurt
- 1 tbs olive oil
- 1 baby cucumber grated
- 1 clove garlic minced
- 1 tbs lemon juice
- dill S&P to taste
Instructions
- Marinade chicken with olive oil, lemon juice, minced garlic, oregano, S&P in medium bowl and set aside for 30 minutes or overnight.
- Prepare Tzatziki sauce with all ingredients listed and refrigerate until ready to overnight.
- In large bowl, add cucumber, tomatoes, olives, onion, cheese and dill. Stir well to combine then arrange salad into 4 bowls.
- Pre-heat grill - remove chicken from marinade and grill until chicken is tender and cooked through.
- Remove chicken from grill and let rest for 5 minutes.
- Slice and add on top of salad.
- Serve with Tzatziki sauce
