Vegan Sloppy Joes

Grown up version of a childhood classic that is plant-based and delish!

Ingredients
  

  • 1/2 cup dry lentils (bronw or green)
  • 1 1/3 cup water
  • 1 tbsp olive oil
  • 1 medium onion, chopped
  • 1 red bell pepper, chopped
  • 1 cup mushrooms, chopped
  • 2 cloves garlic, minced
  • 1 15oz can tomato sauce
  • 2 tbsp maple syrup
  • 1 tbsp worcestershire sauce
  • 1 tsp smoked paprika
  • 1 tsp chili powder
  • salt & pepper to taste
  • 4 buns of choice

Instructions
 

  • Rinse lentils and add to pot of water. Bring water to a boil, reduce heat and let simmer until most liquid is absorbed. (15-20 minutes) Drain any excess water and set aside.
  • While the lentils cook, heat olive oil in large skillet over medium heat. Add onions, pepper, mushrooms and garlic and saute until softened.
  • Add in cooked lentils, tomato sauce, maple syrup, worcestershire sauce and seasonings.
  • Let mixture simmer and cook for about 10 minutes - sauce should thicken.
  • Serve in toasted buns with toppings of choice
