Preheat oven to 375f
Spray pan liberally and add chopped eggplant, onion & oil to baking sheet. Mix well.
Bake for 15 minutes until soft
Let cool a few minutes then pour into food processor or blender
Add remaining ingredients (except marinara sauce)
Blend until combined but still chunky
Roll into 12 even balls and add back to the baking sheet (sprayed liberally so not to stick)
Bake in the oven for about 30 minutes until they firm up and get brown on top.
Remove from oven and let cool a bit before handling.
1Add to favorite pasta or zoodles with heated up marinara sauce. Or make a meatball parm sandwich!
