Vegan Eggplant Meatballs

Ingredients
  

  • 1 medium unpeeled eggplant cut into bite-size pieces
  • 1 small onion chopped
  • 1 tbs chopped garlic
  • 1 can low sodium white beans rinsed
  • 1 cup almond flour
  • Fresh parsley
  • 1.5 tsp Trader Joes 21 Seasoning Salute or other fav seasonings
  • Low sodium marinara sauceĀ  or can chopped tomatoes
  • 1 tbsp olive oil

Instructions
 

  • Preheat oven to 375f
  • Spray pan liberally and add chopped eggplant, onion & oil to baking sheet. Mix well.
  • Bake for 15 minutes until soft
  • Let cool a few minutes then pour into food processor or blender
  • Add remaining ingredients (except marinara sauce)
  • Blend until combined but still chunky
  • Roll into 12 even balls and add back to the baking sheet (sprayed liberally so not to stick)
  • Bake in the oven for about 30 minutes until they firm up and get brown on top.
  • Remove from oven and let cool a bit before handling.
  • 1Add to favorite pasta or zoodles with heated up marinara sauce. Or make a meatball parm sandwich!
