Chicken, Spinach and White Bean Soup

Ingredients
  

  • 32 oz carton low sodium chicken broth
  • cups tomato sauce or 1 box pompi crushes tomatoes
  • 1 15 oz can low sodium cannellini beans drained & rinsed
  • 3 boneless skinless chicken breast cubed
  • ¾ tsp red pepper flakes
  • 6 oz baby fresh spinach
  • Salt & Pepper to taste
  • ½ cup chopped fresh basil
  • ½ cup fresh grated parm cheese

Instructions
 

  • In stock pot bring chicken broth, sauce, beans and red pepper flakes to a boil.
  • Turn heat to low and simmer.
  • Season chicken breast with s&p and add to pot.
  • Let chicken cook while stirring occasionally - about 10 minutes.
  • Add in spinach and let wilt.
  • Let cook about 5 minutes more.
  • Add in basil and top with grated cheese.
  • Season with s&p to taste.
  • Enjoy!
