Fit Pancakes

Ingredients
  

  • 2 cups old-fashioned oatmeal I use Bob's Red Mill GF
  • 1 large ripe banana
  • 2 eggs
  • 1 cup unsweetened almond milk or any milk you use
  • 1 tsp  vanilla extract
  • 1 tsp  baking powder
  • 1/2 tsp  coconut oil
  • Salt and Cinnamon to sprinkle
  • Cacao Nibs optional

Instructions
 

  • Place all ingredients in a blender or food processor.
  • Blend well.
  • Heat a sprayed (or nonsticskillet over medium heat.
  • Pour 1/4 cup portions onto the pan. (add cacao nibs here is desired)
  • Look for edges to cook or turn light brown, then flip.
  • Cook additional 2 minutes.
  • Add desired toppings and enjoy!
