Vegan Vodka Sauce

Ingredients
  

  • 1 tube of tomato paste
  • 1/4 cup vodka
  • 1 14 oz can full-fat coconut milk
  • 1/4 cup olive oil
  • 2-3 garlic cloves
  • Salt & Pepper to taste chili flakes, parsley, basil etc.. if desired

Instructions
 

  • Heat olive oil over medium heat. Add the garlic, be sure not to burn. Only cook for a few minutes.
  • Add tomato paste until loosened up a bit.
  • Add in Vodka and let it simmer out. Then add in coconut milk, salt & pepper and blend well together and let simmer for a few minutes.
  • Once pasta is cooked, add sauce and enjoy. Season more as desired.
