Healthy Greek Salad

Ingredients
  

  • 1 orange pepper chopped
  • 1 cup cherry tomatoes sliced
  • 1/2 cup kalamata olives sliced
  • 1/2 English cucumber chopped
  • 1 cup chickpeas drained and rinsed
  • 1/4 cup feta cheese crumbled on top
  • 1/4 cup fresh parsley
  • 1/2 cup Primal Kitchen Greek Dressing more if needed

Instructions
 

  • Add all ingredients to a large bowl and toss gently. Pour dressing over right before serving.
  • Best eaten right away or save for a day or 2 in the fridge with no dressing. (dressing may make it soggy)
