Pumpkin Oatmeal Cookies

Savory pumpkin spice oatmeal cookie - great breakfast treat or snack!

Ingredients
  

  • 1 1/2 cups Old Fashioned Rolled Oats
  • 1/4 cup hemp seeds
  • 1 tbsp chia seeds
  • 1 tbsp pumpkin seeds
  • 1 tbsp dried cranberries
  • 1 tbsp raisins
  • 2 tbsp pumpkin spice
  • 1 tsp ground ginger
  • 1 tsp nutmeg
  • 1/2 tsp salt
  • 2 tsp baking powder
  • 3/4 cup pumpkin puree
  • 2 eggs
  • 1/2 cup almond milk
  • 3 tbsp maple syrup or honey
  • 1 tbsp peanut butter
  • 2 tsp vanilla extract

Instructions
 

  • Preheat oven to 350F
  • Grease a baking sheet
  • Whisk together pumpkin puree, eggs, almond milk, peanut butter, maple syrup or honey, and vanilla. Then fold in dry ingredients. From Oats to baking powder.
  • Combine well and scoop into even mounds on the baking sheet. Should make about 12-14 cookies depending on size.
  • Bake for 10-12 minutes until edges start to brown. Let cool completely before storing. Enjoy them warm out of the oven!
