Fall Classic One Pot Meal

Ingredients
  

  • 3 tsp. olive oil divided
  • 1 medium onion chopped
  • 2 medium granny smith apples peeled, cored and diced
  • 2 cups cubed baked sweet potatoes
  • 1/4 cup dried cranberries
  • 8 oz chicken breast boneless & skinless, chopped (cooked)
  • 1/4 tsp. sea salt
  • 1/4 tsp pepper
  • 1/4 tsp paprika

Instructions
 

  • Heat 11/2 tsp oil in large nonstick pan over medium heat
  • Add apples and onions, cook stirring frequently for 10 minutes or until apples and onions begin to soften.  Transfer to a large bowl.
  • Add in sweet potatoes, cranberries, chicken and seasonings. Mix well.
  • Heat remaining oil over medium heat.
  • Add apple mixture; layer in pan and cook until heated through approx 10-15 minutes.
