Preheat oven to 375f and grease a loaf pan.
In a large bowl whisk together the coconut oil and honey. Then whisk in eggs and milk.
Add in baking soda, cinnamon, vanilla, salt, and nutmeg. Mix well.
Use a big spoon to add in zucchini and slowly add in flour. Some zucchini lumps are ok.
Add in mixed nuts (optionaand mix in 1/4 cup of the chocolate chips and sprinkle the rest on top.
Bake for 50-60 minutes until a toothpick comes out clean.
Cool completely before slicing and enjoying.
Store in fridge for a few days or freeze for up to 3 months.
