Healthy Fish Tacos

I love when I remember that it is #tacotuesday! I mean what is more fun to eat than Tacos?! There are so many ways to enjoy them too! I have made crockpot chicken tacos to cauliflower tacos to lentil tacos. The question is are you team crunchy taco or team soft taco? I tend to lean towards the soft tacos and I recently found Masienda organic blue corn tacos that are low in calories, carbs and only have 3 ingredients! SCORE!
 
 
When I first posted about these, I mentioned that I am trying to up my fish eating game. There are just so many benefits to eating fish (not your thing, no worries I get it!) We usually stick with salmon but I decided to try cod for these fish tacos and they were the perfect white flaky fish to do so with! 
 
My fav place to shop is Wegmans, and they have their family pack style (think Costco) that is affordable and great to stock up on (as long as you are going to use it!) When I saw they had organic cod each in their own portion seal I had to grab them! (great for meal prep!)
 
 
Let’s talk about how fast they cooked up! Like, don’t turn your back on them fast! I like to make my own taco seasoning which consists of smoked paprika, cumin, chili powder, garlic powder and a sprinkle of TJ’s 21 seasoning salute. (if you like heat add in red pepper flakes!) 
 
Saute oil, garlic, and onions in a large skillet over medium heat. Add in the fish (I like to cut them into pieces, this way they cook up super fast) along with the seasonings. Once cooked through remove from heat. A short cut I like is to use bagged broccoli slaw and mix in salsa. Let it sit for about 30 minutes so it softens up. Then start layering your taco! 
 
Topping options are endless and I feel a personal preference. But I went with mashed avocado and chopped tomatoes seasoned up! Other options are cheese, cilantro, yogurt dressing……
 
I think your next Taco Tuesday is going to be delish!  The best topping is a margarita if you ask me!

Healthy Fish Tacos

Ingredients
  

  • 3 pieces of medium size cod or other white flaky fish
  • Tortillas of choice
  • 1 jar organic salsa
  • 1 bag broccoli slaw
  • 2 cloves garlic chopped
  • 1 small onion chopped
  • 1 tsp  smoked paprika
  • 1 tsp  chili powder
  • 1 tsp  garlic powder
  • 1 tsp  cumin
  • 1 tsp  21 seasoning salute
  • 1 tbsp oil

Instructions
 

  • Heat large skillet over medium heat. Add oil and saute onion until soft then add in garlic.
  • Cut fish into bite-size pieces and add to pan along with seasonings. Mix well in the pan and cook through (should only take a few minutes)
  • Prepare slaw by adding to a large bowl and top with salsa. Mix well together and season as desired. Let sit to soften. (could do this 30 minutes before)
  • Layer tacos with slaw, then fish mixture and top with fav toppings.
  • Can be stored separately in the fridge for a few days.

Note: I got about 4-6 tacos from this recipe
