Greek Style Shrimp Salad

You know when some nights you just don’t have the time to cook or let’s be honest you really don’t feel like it? Guilty! As much as I love to cook and share with you, after a full day of work, ubering the kids and whatever else is going on I just don’t have it in me.  That is where this recipe was born from  – not wanting to cook but still wanting to eat something healthy! Bring on shrimp over a Mediterranean style salad!
 
I promise, nothing crazy here just a few simple ingredients that you may even have on hand. I know that I always have a bag of frozen shrimp available for dinner nights just like these. With veggies on hand like tomatoes, olives, cucumbers and of course feta this dish comes together in no time. 
 
To save time, I go for the shrimp that is already peeled and deveined. Organic when possible, please! Just defrost them the day before or run cold water over them for a few minutes before cooking. Season with Trader Joe’s seasoning salt (if you haven’t tried this one yet, pick one up!) Cook shrimp until cooked through and top over salad with a dressing made from simple ingredients like balsamic vinegar, EVOO, dijon mustard, garlic, oregano, and s&p.
 
 
Just look at the rainbow of colors.  These could even be cut up and prepared the day before an stored in the fridge. Feel free to add fresh herbs like parsley and basil to kick the flavor up a notch. If using for meal prep, store the salad, shrimp, and dressing separately. Then heat up the shrimp (if desired), add to salad and top with dressing. Voila!  Yes, it can be that simple!

Greek Style Shrimp Salad

Ingredients
  

  • 1 lb shrimp fresh or frozen
  • 2 cups cherry tomatoes sliced
  • 2 medium cucumbers sliced
  • 1/2 cup kalamata olives sliced
  • 1/2 cup red onion sliced (soak in water for less sharp taste - optional)
  • Feta cheese to sprinkle on top
  • TJ Seasoning salt
  • 1 Tbs olive oil
  • Dressing:
  • 1 clove garlic chopped
  • 1/2 tsp  oregano
  • 1 tsp  dijon mustard
  • 1.5 tbs balsamic vinegar
  • 1/2 tsp  salt
  • 1/2 tsp  pepper
  • 1/4 cup EVOO

Instructions
 

  • Season shrimp with seasoning salt to your taste
  • Heat large pan over medium heat with oil.
  • Cook shrimp until no longer pink
  • Combine all salad ingredients in large bowl.
  • Whisk dressing ingredients in a small mason jar, shake well.
  • Add shrimp to salad and top with dressing.
  • If using for meal prep, store separately and assemble before eating.
