Chickpea Salad Sandwich

Ingredients
  

  • 1 can chickpeas rinsed & drained
  • 1 tsp honey mustard
  • 1 tbs maple syrup or honey
  • 3 tbs tahini
  • 1/4 diced onion red or white
  • 1/4 cup chopped celery
  • 1/4 cup chopped pickle
  • Salt & Pepper to taste
  • Dash of hot sauce if desired

Instructions
 

  • Pour drained & rinsed chickpeas in a large bowl and mash with a fork - you can leave some clumpy for texture.
  • Add in remaining ingredients. Taste and adjust as needed.
  • Toast bread and scoop about a 1/2 cup onto one slice of bread then add your toppings on to the other.
  • Put together and enjoy!
