Mash banana in a large bowl until creamy consistency.
Add remaining ingredients and mix well.
Spoon mixture into muffin pan (can use cupcake liners)
Make cup shapes in the muffin pan and refrigerate for 1 hour to firm up.
Preheat oven to 350f and bake for 30 minutes.
Let cool completely before storing in airtight container in the fridge.
Will last 4-5 days. May be able to freeze - personally haven't tried that yet!
