Fresh Blueberry Oatmeal Muffins

Ingredients
  

  • 2 cups old-fashioned rolled oats
  • 2 large ripe bananas - cut into chunks 2 large eggs
  • 1 cup plain greek yogurt
  • 3 Tbsp honey
  • ½ tsp pure vanilla extract
  • 1.5 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp sea salt
  • 2 cups fresh or frozen blueberries or any berry
  • ½ tsp hemp seeds optional
  • ½ tsp flax or chia seeds optional

Instructions
 

  • Preheat oven to 325 degrees F
  • Lightly spray or add muffin liners to 12 cup muffin tin
  • Add oats, yogurt, bananas, eggs, honey, extract, hemp/flax/chia seeds, baking powder and soda, salt to a blender and blend until smooth
  • Fold in blueberries
  • Divide batter into prepared muffin tin
  • Bake 20-25 minutes (check with toothpick)
  • Set out to cool
  • Refrigerate for a few days or freeze individually.
