No Mayo Tuna Salad

Tuna is not for everyone, I get it. I once turned my nose up to tuna too!  But I did find a brand that I truly love called Safe Catch and has listed on their cans the least amount of mercury in it!  If you didn’t know, tuna usually contains high levels of mercury so it should be consumed in moderation. This tuna salad recipe I skipped the mayo and when with a lemony dressing. It came out light and tasty! 
 
 
This recipe came about while looking to use up what I already had in my kitchen after coming back from our Napa vacation. I was still in vacation mode and was not looking to hit the food store yet or anything complicated. I had some of Trader Joe’s red lentil pasta left (so yum – a must try!) spinach, tomatoes and onions from farmers market I picked up that day (staples in our house – always in our morning omelets) and I had the random can of tuna in my pantry – I think for moments just like this!  
 
 
While the pasta is cooking you can chop up the onions and slice the cherry tomatoes in half. I usually buy a large red onion at the beginning of the week, chop it up and store it in the fridge so I can grab as I need. You can also prep the dressing too during this time. After the pasta is done cooking, rinse with cold water to stop the cooking process. Add in the rest of the ingredients and toss with a yummy lemony dressing (recipe below). All can be done in about 15 minutes as the red lentil pasta cooks fairly fast.

No Mayo Tuna Salad

Ingredients
  

  • 2 cans Safe Catch Tuna
  • 2 large handfuls of pasta you can use more or less
  • 2 handfuls of fresh spinach chopped
  • 1/2 cup chopped red onion
  • 1/2 cup feta cheese optional
  • 1/2 cup sliced cherry tomatoes
  • 1/4 cup sunflower or pumpkin seeds
  • Handful chopped fresh basil
  • Lemony Dressing
  • 2 tbs olive oil
  • 1 tsp lemon juice
  • 1 tsp honey mustard
  • 1/2 tsp minced garlic
  • sprinkle of salt & pepper to taste

Instructions
 

  • Cook pasta until cooked al dente (a little bite to it). Drain and rinse in cool water.
  • While pasta is cooking prepare dressing in a mason jar and shake to mix well.
  • Transfer pasta to a large bowl and add in the remaining ingredients. Mix well and enjoy!
  • Will stay good in the fridge for a few days!
