No Flour! Banana Pumpkin Bread


It is cold and snowy day in Jersey today as I watched my son shovel our patio and walkway – he is 10 by the way!  Before he went out he asked for me to make him banana bread so he could make a peanut butter sandwich with it when he came in!  lol! I love the way he thinks!  I have recipes for other banana bread type foods but I wanted to switch it up and add pumpkin this time for the added vitamins it brings. (think E, B6, iron and Magnesium just to name a few health benefits!)  No need for the peanut butter since he was slathering it on anyway! 

 I think the PB will fit nicely right in there! Yum!

I had all of my ingredients on hand (score!) and there are not many – which is the way I like to bake – very few ingredients so there is less mess and fuss. Old fashion rolled oats are a staple in my house for baking and overnight oats in a jar – which are fantastic for a quick breakfast or snack. I like to use Bob’s Red Mill Old Fashioned Oats . I still had a container of pumpkin from my pumpkin craze in the Fall and eggs and bananas are another staple in my house.  

The mix in’s are the fun and creative part.  This time I added in Enjoy Life chocolate chips which are dairy, nut and soy free. I also added in silvered almonds but any nut would go well – think walnuts and/or pecans too! Even fruit! You can opt to make these into muffins if you wish.  Just note that when it cools the bread will cave in a bit – but trust me it still tastes yummy!

No Flour! Banana Pumpkin Bread

Ingredients
  

  • 2 cups oats Bob's Red Mill Old Fashion Oats
  • 2 eggs I love Vital Farms
  • 2 ripe large bananas
  • 1 cup pumpkin puree
  • 2 tbs honey
  • 1.5 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp vanilla extract I love Simply Organic
  • Sprinkle of fresh sea salt
  • Mix in about 1 - 1.5 cups of your liking chocolate chips, nuts, fruit...

Instructions
 

  • Preheat oven to 400Spray or lightly grease bread pan or muffin pan
  • Place all ingredients (hold off onto the mix ins for noin a food processor or blender. Blend until the oats are broken down a bit. (this may take up to 3 minuteStop to scrape the bowl or blender if necessary.
  • Once finished blending, fold in the mix ins.  I also added a few more chocolate chips on top once poured into the bread pan.
  • Pour mixture into pan or muffin pan and bake for 15 minutes if muffins 25-30 minutes if bread pan is used.
  • Do the tooth pick check and then let cool for about 15-20 minutes.
  • Then Enjoy!  Try making a PB sandwich like my son did - it was delish!
